I haven't read much from the EU, mostly YouTube videos talking about different stories and periods. I should explore the EU more.
Now is the best time to do it since Disney will never adapt those stories they only pull from them.

The EU is more authentic since George Lucas was involved with it.

A good place to start is Shadows of the empire which takes place after The Empire Strikes Back and right before Return of the jedi.

It is a video game comic book series and a novel with an audio drama and soundtrack.

Also Heir to the empire Dark force rising and The last command known as The Thrawn trilogy or the original sequel trilogy of books is great too.

Also checkout the 2003 Clone Wars TV show it is short but it is awesome and does a way better job connecting with the prequels unlike The Clone Wars 2008 version.
